Gaeta’s Cuisine offers a wide assortment of food products, from land and sea. "Tiella" is a specialty made with products of the sea and land and is present in all the restaurants in Gaeta. Tiella stuffed with mussels, sardines, octopus, squid, spinach, onions, endive, cod, etc.., which certainly has a history commoner as appreciated by fishermen and farmers who consumed instead of "sandwich" stuffed with sausage or cheese during the noon meal.
Another pearl of our kitchen is the “Olive of Gaeta”, slightly tapered, purplish in color, bitter taste winey with various shades of vinegar. It is used to produce an excellent olive oil and olives in brine. Olive of Gaeta, also described by Virgil in the Aeneid, had its peak in the 1400s thanks to the attitudes to agriculture, commerce and navigation of the citizens of the Duchy of Gaeta, which exported oil and olives Gaeta throughout the Mediterranean, making a lot of food demand and appreciated for their excellent quality.
